| Thank you for pointing the egg information out to me. I must have been very tired and confused eggwhite for eggyolk. Guess I will have to find a way to make the mayo without the yolk. My food allergies make it very difficult to make a decent salad dressing.

To make an emulsion like mayo without the yolk will require a high shear mixer to break up the oil. A "stick" type blender should do the trick, but a hand whisk certainly wouldn't. Egg whites should emulsify with oil sufficiently to make a stable creamy sauce, but you'll want to keep near room temp (things heat when you mix them hard) and add the oil very slowly. The aim is to get the smallest droplets of oil possible, much the same as is done in homogenized milk. Make the emulsion first, then add in flavorants.
As for pasteurizing the eggs, salmonella is not the threat it once was, so the risk is very very low. For myself, I wouldn't worry and would use raw egg white.

OK, my curiousity got the better of me, as it often does, so I made some mayo with whites only to try it out. It worked just fine with the pastureized egg whites in a carton, so you can use those. Easy-peasy!
I didn't measure, but it looks like the proportions are in the same area as a recipe with yolks, maybe a little more egg white. Used the white straight out of the fridge, added room temp canola oil (any oil should work) very slowly and in stages while using a metal blade on a stick blender (highest speed) in a tall cup. Mixture thickened as more oil was added. It does take quite a bit of whizzing to make it all emulsify, but it looked fine. All liquid ingredients (vinegar, oil, egg, lemon juice) were done at the same time. Added the mustard, white pepper, etc. after.
It's worth a try if you have the stick blender on hand. I may try to work up a real recipe for the website later. For now, you can just cut and try. This looks like a winner! Thanks for the inspiration.

Chez Knochen - Basic Mayo Recipe
- 2 Tablespoons pastureized egg whites (from a carton is fine)
- 1 teaspoon wine vinegar (red or white or whatever)
- 1 1/2 teaspoon lemon juice
- 1/8 teaspoon salt
- 1/2 Cup MP safe oil (whatever you like should work, just be sure it's MP safe!)
- 1/2 teaspoon dijon mustard (prepared)
- 1/8 teaspoon white pepper
Place egg whites, vinegar, lemon juice, salt, mustard, and pepper in a tall, narrow mixing container (the milkshake cup that came with the blender is good). Using a stick blender at highest speed, slowly add the oil, drizzling it in over a period of a couple of minutes, being sure to emulsify the oil thouroughly. It should thicken to a point where it won't run. You'll need a spatula to get it out of the container.
For a salad dressing, you could add less oil to make it pourable, and add other spices to taste. Now if I could just find some buttermilk powder with no Vit D... Ranch dressing!   
The plain mayo is good, but you could also add other ingredients after the basic mix is made. Try adding (hand mix, no blender needed):- 1/2 teaspoon onion powder
- 1 teaspoon dried chives
- pinch of smoked salt
- (1 teaspoon dried onion flakes too, if you want to let it sit a couple of hours to hydrate)
This makes a pretty good onion dip for veggies! Not exactly "low fat" though, so go easy, OK? But I know what I'm having on Superbowl day!
This doesn't make a big batch, but it could easily be scaled. It's very easy to make. The only thing to remember is to add the oil slowly or it might not emulsify. Refrigerate after making or consume immediately.

Knochen, that looks good. Can you get the egg white without other ingrediants? I get reactions to most additives. I cannot have raw eggs. Too risky for me, especially here in Florida. I think the food is left of the loading docks too long and so you just don't know the history when you purchase it. It takes very little to make me very ill. So I will check the pasteurized whites out and hopefully will find a brand that is pure. ThANKS

Most groceries have generic pasteurized egg whites available in a pint carton. They should be in the same refrigerated section as the regular eggs. Be sure to read the ingredients, as always, to be sure it's just the whites alone with no additives.
The consistency of the whites from a carton is a little startling. It's a sort of thin, vaguely milky liquid that doesn't look much like egg whites! Don't let that throw you. I've been eating them for years now. I think the pasteurizing process does something to them to make them like that. They cook up fine and work fine in recipes.

I have unidentified lesions in the nose area. These started around 8 months ago and I saw 3 dermatologists who said it was aging skin. I know that is not true because they appeared overnight. None of them even suggested a biopsy. My cousin lives out in Thousand Oaks, California and sees Dr. ---------- who is a dermatologist and got me a product that Dr. --------- put together. It is called Psoria-Gold. The main ingrediant is turmeric. And so I have been using this for a while now. Some of the lesions have shrunk but now I have two large ones on opposite side of nose bridge. I know tumeric is on the list of things not to use. I was wondering if using it on the skin is a problem. I just thought I might like to add that these lesions started appearing around the time the intergrative doc that I was seeing put me on 10,000 IU Vit. D-3 daily. Obviously when I found out about MP I discontinued useing D. I will be seeing the new doc next week and hope to start MP meds asap.

As the lesions started at the time you were taking D supplements, I should think they will resolve on the MP without further treatment. The curcumin (the active ingredient in turmeric) you apply to your skin is bound to be absorbed systemically. Not worth the risk, in my opinion.
